Double Chocolate Coconut CookieLast weekend the hubs and I were sitting on the couch lounging and enjoying some down time when our sweet tooth kicked in. I was trying to suppress the urge to bake something right about the same time hubs asked me to bake cookies. So, of course I had to! I browsed the pantry trying to figure out what kind of cookies I wanted to make, and what ingredients I actually had on hand. After some digging I came up with white chocolate chips and some shredded coconut. Since I was in the mood for chocolate, I decided to add some coco powder.

Add it all together, these turned out to be very tasty cookies. I’m pretty sure the hubs and I ate 1/3 of them hot out of the oven. The rich chocolate was balanced nicely by the chewy coconut. The cookies were crisp around the edges and chewy in the middle. Will definitely be making these again.

½ c coconut oil
1 c powdered sugar
¼ c sugar
¼ c coco powder
1 egg
¼ tsp coconut extract
1 c flour
1 tsp baking soda
¼ tsp salt
1 ¼ c unsweetened shredded coconut
1 c white chocolate chips

Pre-heat oven to 350 and line baking sheets with parchment paper.

In an electric mixer cream together the coconut oil, powdered sugar, sugar and coco. Mix in the egg and coconut extract. Mix in the flour, soda and salt. Add the shredded coconut and chips and mix until evenly combine.

Drop rounded tablespoon-fulls onto the prepared baking sheets about an 1 ½ inches apart.

Bake for 8 to 10 minutes, until edges are crisp. Allow to cool on baking sheet for 3 to 5 minutes and then transfer to a cooling rack (or enjoy!).
